Cookies for Breakfast

The Globe and Mail just featured yet another article on why it’s so important to eat breakfast. While I’m sure this is not breaking news to anybody not living under a rock, I have to admit that on weekdays, I really have to force myself to eat breakfast. It comes down to 2 things:

1) I’m usually in a bit of a rush

2) I’m simply not HUNGRY right when I wake up.

The weekends are fine, as I am able to wait a while before getting hungry and see what I actually feel like eating. On weekdays, however, I’m really not a fan of the idea of waking up 1 to 2 hours earlier just so that I can ‘become’ hungry.

I needed to find a solution to my breakfast conundrum that would be a) appetizing enough and b) not take a lot of time.

Enter: The Breakfast Cookie!

I can’t lie, I did not come up with this cookie myself, although I wish I did. I found it on another blog – The Fitnessista (the writer of this blog is currently enrolled in raw culinary school – mega jealous.)

The breakfast cookie is the perfect solution to me because it is full of nutritious ingredients, is a good combo of protein, fat, and starch (so it keeps me from eating my arm before lunch), is prepared very quickly the night before, and well, the day I don’t find a cookie appealing to eat is the day you lock me up and ask me what I did with the ‘real’ Kristen. Cookie monster over here!

For the cookie pictured, I added:

  • 2/3 cup oats (non instant)
  • 1 tbsp almond hazelnut butter (any nut butter will do, but this is my fave)
  • 1/2 scoop of Vega Smoothie Infusion* (this is a plant based SUPERFOOD protein powder)
  • 1/8 cup Almond Milk (I use Almond Breeze Unsweetened Original but am planning on making my own soon)
  • 1/2 mushed banana
  • 1 tbsp goji berries
  • 1 tsp chia seeds (another super food!)
  • hint of agave for sweetness (my favorite natural sweetener, and low on the glycemic index)

Basically you mishmash all of this stuff together, put it on a plate, pop it in the fridge, and when you wake up you have a nice chewy delicious healthy breakfast treat. The best part is you can modify the mix ins to your taste – different berries, chocolate chips, nuts, seeds, up to you.

*I’m not generally a fan of “protein powders” or supplements but the whole Vega line is outstanding – it uses whole foods and is all plant  based.  I like it because it provides me with a wide variety of super foods without having to purchase/grind up all of these things myself. It’s a convenience that I can justify.
